Christmas cake by Vaishali Sabnani

This lovely fruit Christmas cake jingled its way to be the first entry for the Christmas Carnival on Tasty Bites. As usual Vaishali Sabnani has surprised us with this flavorful, moist and rich Christmas Cake.

In fact I received quite a few recipes from her even before I started drafting for the Carnival page :) Wish to get to learn many Christmas treats from all of you for the Carnival and make this page a useful resource for many to refer in future.


Ingredients;

  • 75 gms……………………….sultanas
  • 75 gms……………………….raisins
  • 75 gms……………………….currants
  • 75 gms……………………….glaced cherries
  • 50 gms……………………….mixed peel
  • 250 ml………………………..orange juice(i used Tropicana)
  • 50 gms……………………….toasted hazelnuts
  • 50 gms………………………slightly crushed almonds
  • 50 gms ………………………lightly crushed walnuts
  • 225 gms…………………….. flour
  • 1/4tsp………………………….nutmeg pwd
  • 1/4 tsp…………………………cinnamon pwd
  • 1/4 tsp…………………………clove pwd
  • 1tsp……………………………..baking soda
  • 1tsp……………………………. baking pwd
  • 120 ml…………………………..milk
  • 60 ml……………………………oil
  • 45ml……………………………..rum or brandy or substitute with orange juice
  • 4-6 tsp ………………………….brown sugar
  • 1………………………………….lemon zest
  • 1………………………………….orange zest

Method: *soak the sultanas,raisins,currants,cherries n mixed peel overnight in orange juice.
*preheat the oven at 180deg.
*line n grease a tin.
*sift the flour,bk pwd, bk soda and the spices.
*blend sugar ,milk and oil.
*add sifted flour to the fruit.
*stir in milk ,oil n nuts n lemon n orange zest
*now add rum or juice.
*bake for nearly 1hr 30mins or until the cake is golden brown and firm to touch.
*let the cake cool for at least 30mins before unmoulding it….or else it will start cracking.
Note: I had a real tough time getting the mixed peel..finally experimented..n it turned out real ummm
anyone interested..i can share the recipe..:)

    I will have a bite Vaishaliji ;-) ..I was just planning to bake this today and send a post :-) ..Now i will experiment with some other recipe..also please do share the recipe of mixed peel :) ..

    n now the rec 4 the mixed peel..

    peel citrus fruits like lemon ,orange n grape fruit.
    discard the white part frm the peel.
    leave it in ice cold water for 10-15 mins.
    boil water n add these peels…repeat this 4-5 times changing water everytime.
    make a heavy syrup of water n sugar.
    chop the peels in strips.
    boil these in the sugar syrup till translucent.
    remove frm syrup n place individually on butter paper.
    let dry.
    this takes up abt 2 days..of course depending on the weather.
