Mango kesari phirni by Ekta Mehta

Festivity is in the air and on Tasty Bites too, more so with the delicious sweet recipes received from all the corners of the Earth. The Event Traditional Festive Sweets is getting kick started by this beautiful Mango Kesari Phirni by Ekta Mehta. The dessert looks gorgeous and tempting to try out soon.
She wrote me this mail ” hi di..I was just typing this mail when u announced the event  ;-)   Thanks Ekta for this beautiful recipe for the coming festive season filled with fun & frolic.

Ingredients;

  • 1 liter milk
  • 4 tbsp rice
  • 1 cup mango pulp ( fresh or canned)
  • 2 tbsp condensed milk
  • 5 tbsp sugar
  • a pinch of cardamom powder
  • few strands of saffron
  • few raisins,pistachios and almonds

Method:

Soak the rice for about an hour.Drain the water and ground to a coarse paste with little milk.

Heat the milk in a heavy bottomed vessel.When it starts boiling add rice paste and cardamom powder.Keep stirring and cook on slow to medium heat.

As the rice gets cooked it will turn thicker.Add sugar ,saffron strands and raisins, coarsely ground pistachios and finely chopped almonds.

Then add condensed milk and let it cool.Add mango pulp and refrigerate it.

Serve chilled garnished with pistachios and almonds.

Note:

  • Rice powder can also be used.
  • Sugar need to be adjusted depending on sweetness of pulp.
  • Corn flour can be added to thicken it faster.
  • Freshly chopped mango cubes can also be added.
  • Other variations using pineapple, guava, peach etc can also be made.

    Mango, my family’s favourite fruit. Have to get the pulp from the store only. Will start cooking then. It is easy to make. Thanks for sharing.
